Mescolate le melanzane con un paio di cucchiai di sale grosso e versatele all\u2019interno di uno scolapasta, coprite con un coperchio, adagiatevi sopra un peso e lasciate riposare per un\u2019ora in modo che le verdure perdano parte del loro liquido. Trascorso il tempo di riposo delle melanzane, passatele sotto l\u2019acqua poi schiacciatele in modo da far sgocciolare l\u2019acqua. Friggete i cubetti in olio di semi ben caldo, fate dorare bene poi scolateli; fateli sgocciolare su un piatto foderato con carta assorbente.<\/p><p>Fate cuocere i rigatoni in una pentola d\u2019acqua salata e scolateli al dente.<br \/>Versate la passata di pomodoro in un pentolino, unite un paio di cucchiai di olio di oliva, unite il basilico e l\u2019aglio. Mettete sul fuoco e fate cuocere per alcuni minuti prima di condire la pasta con la salsa.<\/p><p>Aggiungete poi le melanzane fritte, il prosciutto, una spolverata di pepe, le uova e il formaggio tagliato a cubetti.
