Mentre attendete, versate il cous cous in una ciotola e conditelo, crudo, con 4 cucchiai di olio. Mescolate finch\u00e8 i chicchi sono ben unti. Questo trucco vi permetter\u00e0 di ottenere un cous cous perfettamente sgranato.<\/p><p>Mentre l&#8217;acqua nelle due pentole va a bollore riducete a dadini le carote. Salate l&#8217;acqua a bollore e tuffatevi in una pentola le verdurine e nell&#8217;altra le lenticchie. Sbollentate le verdure per 8-10 minuti: devono rimanere brillanti e sode. Lasciate lessare le lenticchie fino a cottura (20-25 minuti). Spegnete il fuoco delle verdure e prelevate una caraffa di acqua di cottura salata, poi scolatele e tenete da parte.<br \/>Versate l&#8217;acqua di cottura prelevata con la caraffa sopra il cous cous fino a coprirlo di mezzo centimetro sopra la superficie. Chiudete il coperchio (o coprite con un piatto) del recipiente e lasciate riposare almeno 10 minuti. L&#8217;acqua si assorbir\u00e0.<br \/>Nel frattempo separate il sugo in due parti: una met\u00e0 servir\u00e0 per il rag\u00f9 vegan, l&#8217;altra per condire il cous cous. Scolate le lenticchie e unitele ben asciutte con met\u00e0 del sugo e le verdurine. Mescolate bene e se serve restringete il rag\u00f9 sul fuoco\u00a0 e insaporite con peperoncino, aggiustando di sale e pepe.<\/p><p>Dopo 10 minuti di riposo sollevate il coperchio e iniziate a sgranare il cous cous con i rebbi di una forchetta. Trasferite i chicchi ben sgranati in una ciotola e uniteli con l&#8217;altra met\u00e0 del sugo di pomodoro saporito. Mescolate bene. Se non siete vegani potete aggiungere un uovo a questo impasto: serve per compattare il tortino maggiormente. Oliate (o imburrate) dei pirottini in ceramica e spolveratevi del pangrattato internamente, facendolo aderire al condimento. Versate nel pirottino il cous cous al pomodoro e con un cucchiaio sollevatelo sui bordi. Inseritevi il rag\u00f9 vegan e copritelo con altro cous cous, livellando la superficie. Se non avete messo l&#8217;uovo, il cous cous sar\u00e0 un po&#8217; pi\u00f9 friabile quindi vi consigliamo di utilizzare dei coppapasta se non siete abituati ai pirottini: foderate una teglia con carta forno, adagiatevi un coppapasta e procedete distribuendo il cous cous alla base e sui bordi, per poi farcirlo di rag\u00f9 e coprirlo.<\/p><p>Infornate a 180\u00b0 per 20 minuti.
